INGREDIENTS

  • ½ kilo small eggplants
  • 1 kilo of cayenne pepper, minced & dried
  • 100 g walnut, chopped
  • 3 teaspoons minced garlic
  • 6 teaspoon salt
  • Amount of olive oil

How to prepare:

Wash eggplants, Cut the leg, boil them in a large quantity of water. place a saucepan one size smaller than the one you put the eggplants in it so it sit over the eggplants and does not allow them to float so they cooked the right way, leave the eggplants on stove for 15 minutes until they became tender.
Take it from water and put it in ice water, then drain completely.
Sprinkle salt on eggplant and make a slit with knife in each one, which is also should filled with salt.
Put the eggplant in a colander and let it for 3 hours.
Mix chopped cayenne, garlic, walnuts and a teaspoon of salt, and mix well.
Fill every eggplant with the previous mixture by about a tablespoon.
Place the stuffed eggplant in jars (cans or bottles), then Fill the jar with olive oil and leave it for two or three weeks.

Serve it as appetizers  with various dishes.

INGREDIENTS

  • 1 cup chickpeas, soaked overnight
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 tbsp fresh parsley, chopped
  • 1 teaspoon dried coriander
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Oil for frying

How to prepare:

Drain chickpeas from water and put it with new amount of water in a pot on the fire and let it to boil for 5 minutes, then lower the fire and leave it for an hour.
Drain chickpeas and leave to cool for 15 minutes.
Mix remaining ingredients well.
Grind the chickpeas well and add the rest of the mix.
Heat the oil.
Make Falafel balls and press them a little bit with your hand to be settled.
Fry in oil for 7 minutes or until becomes golden.
Take it from oil and place on kitchen wipes till absorb all excess oil.

  • 1 pound flour
  • 5 tbsp milk powder
  • 35 g sugar
  • 1 Tablespoon yeast
  • 1 tbsp baking powder
  • ¼ cup vegetable oil
  • ¾ cup water
  • Pinch of salt

How to prepare:

1. Mix all the ingredients together except - flour- well until complete mixed.
2. Add flour and mix until you get a suitable strength of dough.
3. Let the dough rest for half an hour.
4. Cut the dough into pieces then spread them into thin circles .
5. Put the circles in a pan and on stove until get lovely toast on each side then you can eat it with Shawarma.
